1 lg Onion; chopped
2 cn Black beans (I know it says
"red" beans; but I prefer
black; purists can
substitute kidney beans)
2 Bay leafs
One half cup Chopped fresh parsley (do
not use dried parsley!!!!)
Tabasco to taste (boy; does
that leave an opportunity
open!)
Add enough water to make it just a little bit soupy. Simmer for one hour,
stirring periodically. Serve over rice. The original recipe also calls for
adding sausage, like a polska kilbasa, not breakfast sausage. I'm
vegetarian, so I don't add it. Snyder_Curtis
