Recipe - Red-Plum Spice Cake

1 cup Red plums; drained (chop
plums into quarters;
reserve liquid)
2 cup Flour
2 teaspoon Baking powder
One half teaspoon Salt
One half teaspoon Baking soda
1 teaspoon Cinnamon
1 teaspoon Nutmeg
One half teaspoon Cloves
One half cup Shortening
1 cup Sugar
2 Eggs; well beaten
One half cup Red plum liquid
One half cup Chopped nuts (optional)
Sift flour and dry ingredients together. Cream shortening with sugar; add
eggs and beat thoroughly. Add dry ingredients and beat well. Fold in plums,
plum liquid and nuts. Pour into cake pan approximately 7x11inches. Bake at
375 degrees for about
35 minutes.
Cream Cheese Frosting: Beat 3 ounces cream cheese, softened. Add 2
teaspoons plum liquid and 1One half cups powdered sugar.
