Recipe - Ravioli Filling

Ingredients:

FILLING
1 pound Hamburger ( orginally both
pork and beef were used),
crumbled and fried and
drained
1 pack Frozen chopped spinach
(10oz) thawed
2 tablespoon Riccota cheese
2 tablespoon Ramano cheese
One half cup Bread crumbs ( I use italian
)
3 Cloves garlic, minced
1 tablespoon Oregano
1 tablespoon Sweet basil
One fourth cup Chopped parsley
Salt and pepper to taste

Seeing your request , made me smile, for a few years while I was growing up
we lived in an Italian neighborhood in San Francisco , the corner market
was called Mario's and our neighbors were America and Louie ( she was born
on the boat on the way to America ) the wonderful aromas that filled that
house
:~)))) America felt my mom need to learn to cook and she took her under her
wing (since mom was scotch Irish) America started each recipe with first ,
you need "garlic and a parsley chopped a fine fine fine " Keeping that in
mind I will try to share what was shown to me and How I make filling...
Keep in mind that the spices are approx. amounts because this has never
been written down so here goes .. Enjoy, Neva

after hamburger is browned , add all the ingredients and cook add olive oil
if to dry, turn fire off and let cool slightly.The orginal way was to put
all this thru a hand grinder ( that was my job ) I use the food processer
now , you want the consistancy of not quite paste . fill and crimp edges
and your ready to go ,
