Recipe - Rancho Mesilla Mantequilla

9 Peeled medium potatoes
1 Clove garlic
One fourth cup Melted butter or margarine
2 Egg yolks
One half cup Heavy cream
One half teaspoon Salt
One fourth teaspoon Pepper
4 ounce Can cut or sliced up mushrooms
2 tablespoon Butter or margarine
One fourth cup Chopped parsley

Cook potatoes with garlic clove until tender. Drain and remove garlic.
Mash potatoes with butter (One fourth cup). Blend in yolks, cream, salt, and
pepper. Cook mushroooms in 2 T butter add with parsley to potatoes and
mix. Place in a 3 quart casserole oven dish and bake at 375 F for35
minutes. 8 servings.
