Recipe - Ranch Potato Casserole

6 md Red potatoes; up to 8
One half cup Sour cream
One half cup Prepared ranch salad
dressing
One fourth cup Bacon bits or cooked &
crumbled bacon
2 tablespoon Minced parsley
1 cup (4 oz) cheddar cheese;
shredded
TOPPING
One half cup Shredded cheddar cheese
One fourth cup Melted butter
2 cup Lightly crushed corn flakes
Cook potatoes until tender. Quarter (leave skins on) and set aside. Combine
sour cream, dressing, bacon, parsley, and 1 cup cheese. Place potatoes on
greased 9 x 13 inch baking dish. Pour sour cream mixture over potatoes and
gently toss. Top with One half cup of cheese. Combine corn flakes and butter.
Sprinkle over casserole. Bake at 350 degrees for 4045 minutes. 8 servings.
