Recipe - Raisin-Applesauce Bran Muffins

1 One half cup Shreds of wheat bran cereal
One fourth cup Unsweetened applesauce
One half cup Nonfat buttermilk
One fourth cup Firmly packed brown sugar
One fourth cup Frozen egg substitute;
thawed
2 tablespoon Vegetable oil
1 One fourth cup Allpurpose flour
2 teaspoon Baking powder
One fourth teaspoon Salt
One half teaspoon Ground cinnamon
One fourth cup Raisins
Vegetable cooking spray
Combine first 3 ingredients; let stand 5 minutes. Add brown sugar, egg
substitute, and oil; stir well. Combine flour, baking powder, salt, and
cinnamon; make a well in center of mixture. Add cereal mixture, stirring
just until dry ingredients are moistened. Fold in raisins. Spoon batter
into muffin pans coated with cooking spray, filling threefourths full.
Bake at 400ø for 20 minutes or until lightly browned. Yield: 1 dozen (150
calories and 19% fat each). Protein 3.9 / Fat 3.1 (Saturated Fat 0.7) /
Carbohydrate 31.5 Fiber 4.8 / Cholesterol 0 / Sodium 217
