Recipe - Rainbow Raditore With Chicken Broccoli Red Peppers

12 ounce Mendicino Rainbow Pasta
(corkscrew pasta)
1 tablespoon Olive oil
One fourth cup Mayonnaise
One fourth cup Sour cream
One half cup Marinated artichokes
One fourth cup Parmesan cheese
1 Lemon juiced
1 Clove garlic
One half cup Chicken cubed
One half cup Broccoli florets
One fourth cup Red bell pepper
2 tablespoon Sliced olives
2 tablespoon Fresh basil chopped
Salt and pepper to taste
Boil pasta until tender (46 minutes), rinse immediately with cold water
and add 1 T olive oil. In a blender combine mayonnaise, sour cream,
artichoke, parmesan, lemon, garlic. Blend until smooth. In large bowl
combine pasta and the last 5 ingredients. Toss together with dressing.
