Recipe - Quinoa Pudding Vegan

1 cup Quinoa
2 cup Water
3 cup Apple juice
One half cup Dried dates (packed)
1 cup Dried apples; chopped (or
substitute anyther dried
fruit)
One half cup Dried apricots; chopped,
or
1 (up to)
2 Fresh peaches or nectarines;
chopped
1 (up to)
2 teaspoon Cinnamon

I made this up, it makes a lot, you could halve the recipe if it is too
much for your family. It is a delicious sweet way to add alternative grains
to your diet.
rinse 1 cup quinoa and simmer in 2 cups water for about 20 minutes, or
until all water is absorbed. Add apple juice, dried dates, dried apples,
dried apricots, and cinnamon. Bring to a simmer, cook and stir for about 10
minutes. Chill.
Experiment with other flavors of juice and other dried/fresh fruits.
