Recipe - Quinoa Pudding

Ingredients:

2 cup Quinoa, cooked (basic
Recipe)
3 cup Soy or rice milk or cows
Milk
1/3 cup Honey Or
One half cup Brown sugar (if using real
Mex cane sugar use less)
Egg subst. for 3 eggs or
3 Eggs
1/8 teaspoon Salt
1 tablespoon Soy butter or oil (or
Butter)
1 teaspoon Vanilla
One half cup Raisins
One half cup Shredded coconut
One half cup Almonds or walnuts
Ground
One half teaspoon Cinnamon
One half teaspoon Lemon or orange rind
Grated
1 teaspoon Lemon juice

Combine all ingredients. Pour nto greased baking dish or greased individual
custard cups. Bake n 350 degree oven until set, about 45 minutes. Serve
hot or cold, topped with vegan yogurt, soy or rice cream or apple juice.
