Recipe - Quick Sweet Potato Pie

1 cup Cooked mashed sweet potatoes
1 teaspoon Vanilla extract
One half Stick melted diet margarine
One half cup White sugar
One half cup Dark brown sugar
One fourth cup Egg substitute
1 Dash of salt
1 Dash of cinnamon and nutmeg
1 Unbaked pie crust

Preheat oven to 400. Mix together sweet potatoes, extract, margarine, white
and brown sugars, egg substitute, salt, cinnamon, and nutmeg. Blend well.
Pour into pie crust and bake 12 minutes at 400. Reduce oven temperature to
350 and bake until done.
