Recipe - Quick Strawberry Cake

3 cup Fresh strawberries; cut or sliced up
5 tablespoon Fresh orange juice
1 One fourth cup Sugar
1 cup Allpurpose flour
One half cup Milk
3 tablespoon Butter; melted
1 teaspoon Baking powder
One fourth teaspoon Salt
1 tablespoon Cornstarch
1 teaspoon Vanilla
1 cup Boiling water
Vanilla ice cream
Preheat oven to 350 degrees. Butter a 9inch square baking dish. Arrange
strawberries in bottom. Pour orange juice over. Combine 1 cup sugar, flour,
milk, butter, baking powder and salt in large bowl and blend until smooth.
Spread over strawberries. Mix remaining One fourth cup sugar, cornstarch and
vanilla. Sprinkle over batter. Carefully pour boiling water over batter.
Bake until golden brown, about 50 minutes. Let stand 5 minutes. Serve with
ice cream.
