Recipe - Quick Strawberry Bread

3 cup Flour
2 cup Sugar
1 teaspoon Baking Soda
1 teaspoon Cinnamon
One half teaspoon Nutmeg
3 ounce Strawberry Flavored Gelatin
Three fourths cup Egg Substitute
2 cup Frozen Strawberries; thaw
reserving 3 tablespoon juice
1 md Banana; cut or sliced up
Three fourths cup Vegetable Oil
Preheat oven to 375F. In large bowl, combine flour, sugar, baking soda,
cinnamon, nutmeg and gelatin. Stir until evenly mixed. make a well in
center of dry ingredients. In food processor or blender, combine egg
substitute, undrained strawberries, cut or sliced up banana and oil. Blend until
smoth and creamy. Pour fruit mixture into well and stir gently by hand
until dry ingredients are moistened. Using nonstick cooking spray, grease
two 9 x 5inch loaf pans. Pour batter equally between pans. Bake on center
rack of oven 45 to 50 minutes or until inserted toothpick comes out clean.
Let cool before slicing. Makes 2 loaves. This recipe is from a booklet
