Recipe - Quick Crustless Fudge Pie

4 tablespoon Sweet butter
12 ounce Semisweet chocolate chips
One fourth cup Dark or amber rum
2 teaspoon Instant coffee powder
Three fourths cup Packed brown sugar
3 Eggs
One fourth cup Flour
1 cup Coarsely chopped walnuts
One half cup Chopped walnuts for topping

Preheat oven to 350x F. Grease a 9" glass pie plate. In a 2quart glass
bowl, combine 4 Tblsp. sweet butter and 12 oz. semisweet chocolate chips.
Heat in a microwave oven on high 1 1/14 to 1 Three fourths minutes, until mixture is
melted and smooth when stirred. Stir in One fourth c. dark or amber rum, 2 tsp.
instant coffee powder, Three fourths c. packed brown sugar, 3 eggs and One fourth c. flour.
Mix until smooth and well blended. Stir in 1 c. of coarsely chopped
walnuts. Turn batter into prepared pie plate. Sprinkle another One half c. of
chopped walnuts on top. Bake for 2530 minutes or until puffed. Pie should
still be moist inside. Do not overbake. Let pie cool to room temperature
before serving, topped with whipped cream. Makes 8 servings.
