1 9" Quiche Pastry
6 sl Cooked Bacon; crumbled
1 One fourth cup Swiss Cheese; grated
One fourth cup Parmesan Cheese; grated
3 Eggs; beaten
1 One half cup HalfAndHalf
One half teaspoon Salt
One fourth teaspoon Pepper
Three fourths cup Onion; chopped
1 tablespoon Rendered Bacon Fat; use
drippings from cooking
bacon
SAute onion until tender. Place bacon, onion and cheeses in pie shell.
Blend together eggs, cream, salt and pepper. Pour over mixture in quiche
shell. Bake at 375øF. for 45 minutes, or until mixture is firm and light
brown.
