Recipe - Quiche Honfleur

1 (9inch) unbaked pie shell
1 lg Onion; cut or sliced up thin
1 tablespoon Butter
1 One half pound Cleaned; peeled shrimp
5 Eggs
1 cup Heavy cream
One half teaspoon Salt
1/8 teaspoon Nutmeg
3 ds Cayenne; or so
2 tablespoon Chopped pimento
1 cup Gruyere cheese
Three fourths cup Sour cream
Bread crumbs
Spread bread crumbs lightly over bottom of pie crust. Saute onion in butter
until golden. Add shrimp & saute very quickly. Put onions & shrimp in pie
crust. Mix eggs, cream, salt, nutmeg & cayenne until lightly blended. Add
chopped pimento & pour over shrimp & onion. Bake at 350 for about 3040
minutes or until knife inserted into center comes out clean. Combine
Gruyere & sour cream & pour over baked pie, place until broiler until
bubbly.
