Recipe - Punjabi Garam Masala

5 tablespoon Coriander seeds
3 tablespoon Cumin seeds
2 One half tablespoon Black peppercorns
2 One half tablespoon Black cardamom seeds
1 One half teaspoon Green cardamom seeds
2 Inch stick cinnamon
4 Cloves (up to 5)
3/16 Whole nutmeg, about
(if you want to make your own or it isn't available)
Toast coriander and cumin seeds lightly in a skillet. Pour onto a plate
and allow to cool. Place into a grinder along with remaining ingredients.
Grind to a fine powder. May be done in more than one batch. Place in a
tightly sealed container and store in the *freezer*.
