Recipe - Pumpkin Oatmeal Muffins

PART A
1 One half cup Uncooked oatmeal
1 One half cup Allpurpose flour
Three fourths teaspoon Cinnamon
1 teaspoon Baking powder
Three fourths teaspoon Baking soda
PART B
1 cup Pumpkin butter*
One half cup Skim milk
One half cup Firmly packed brown sugar
3 tablespoon Vegetable oil
1 Egg (or 1 egg white)
TOPPING
One half cup Uncooked oatmeal
1 tablespoon Firmly packed brown sugar
One fourth teaspoon Cinnamon
Combine part "A". Add part "B". Mix just until ingredients are moistened.
Line 12 muffin cups with papers. Fill muffin cups almost full. Combine
topping ingredients and sprinkle evenly over batterfilled cups. Bake at
400 for 2022 minutes until golden brown.
* can substitute 1 One fourth c. applesauce for the pumpkin butter Posted to EATL
