Recipe - Pumpkin Mincemeat Pie

1 cn (14 oz) pumpkin puree
2 Eggs
Three fourths cup Light cream
One half cup Brown sugar
One half teaspoon Cinnamon
One half teaspoon Ground ginger
One fourth teaspoon Each ground cloves and salt
1 cup Mincemeat
1 9inch unbaked pie shell
"The addition of a mincemeat layer gives a delicious, tangy flavor and
nutty texture."
In bowl, whisk together the pumpkin puree, eggs, light cream, brown sugar,
cinnamon, ginger, cloves and salt. Spread mincemeat over bottom of pie
shell; top with the pumpkin mixture. Bake in preheated oven at 375 F. about
45 minutes, or until pumpkin is just set in center.
