Recipe - Pumpkin Custard Bars

1 pack 7ounces applecinnamon
muffin mix
1 cup Rolled oats
One half cup Finely chopped pecans
1/3 cup Packed brown sugar
One fourth cup Margarine or butter, melted
1 8ounce carton dairy sour cr
1 cup Canned pumpkin
1 Beaten egg
1 teaspoon Vanilla
Combine Three fourths cup of muffin mix, oats, pecans, brown sugar, and margarine.
Toss to mix well. Press about 1One half cups of crumb mixture evenly on bottom
of 9x9x2inch pan. Bake in 350 degree oven 10 minutes. Meanwhile, combine
remaining muffin mix and remaining ingredients. Pour over baked crust.
Sprinkle with remaining crumb mixture. Bake in 350 degree oven 30 to 35
minutes or till set. Cool in pan on rack. Cut. Makes 24.
