2 tablespoon Garlic; minced
2 tablespoon Cilantro; fresh, rough
chopped
2 tablespoon Black pepper; freshly
cracked
2 tablespoon Salt
2 tablespoon White vinegar
2 tablespoon Yellow mustard
2 tablespoon Jalapeno pepper; minced
2 tablespoon Olive oil
Combine all ingredients and mix well. Use within two days of preparing.
Rub pork butt with spice mixture and smoke for 1 One half hours per pound at
240250F.
