Recipe - Poultry Sausage

One half pound Ground chicken or turkey
breast
1/8 teaspoon Ground sage
1/8 teaspoon Fennel seed
One fourth teaspoon Crushed red pepper flakes
Freshly ground pepper
Nonstick cooking spray
Salt
In medium bowl, combine ground chicken, sage, fennel, red pepper flakes and
pepper. Knead very briefly (excessive kneading makes poultry tough). Shape
into 4 patties. Spray small skillet with nonstick cooking spray. Add
patties; cook until well browned outside and cooked through inside, 3 to 5
minutes a side. Remove from skillet; season with salt. Yield: 2
