Recipe - Potato Vegetable Au Gratin

5 cup Red Potatoes (About 1 1/2
Lbs); Cubed
2 cup Broccoli Florets
2 cup Carrots; Sliced
1 cup Onion; Chopped
1 cup Reduced Fat 2% Milk
Three fourths cup Sharp Cheddar Cheese (3 Oz);
Shredded And Divided
One half cup Fresh Basil; Thinly Sliced
One half teaspoon Salt
One half teaspoon Pepper
Cooking Spray
Steam potato, covered, for 20 minutes or until tender. Drain and return to
pan; partially mash with a potato masher.
Preheat oven to 375 degrees.
Steam the broccoli, cut or sliced up carrot, and chopped onion, covered, for 10
minutes or until tender.
Combine the potato, steamed vegetables, milk, One half cup cheese, basil, salt and
pepper in a large bowl. Spoon the potato mixture into a 2quart deep baking
dish coated with cooking spray, and top with One fourth cup cheese. Bake potato
mixture, uncovered, at 375 for 20 minutes.
