Recipe - Potato Puff

4 cup Potato, pureed
One fourth cup Butter
One half cup Milk
2 Eggs, separated
Salt and pepper to taste
One fourth cup Parmesan cheese, grated
Heat butter and milk until butter is melted. Beat into potato puree. Beat
in egg yolks and seasoning. Beat whites until stiff and fold in. Turn
mixture into buttered 1 One half quart baking dish. Sprinkle with cheese. Bake
at 350° for 3040 minutes until puffed and golden.
