Recipe - Potato Momos

One fourth cup Ghee
One half tablespoon Minced ginger
One half tablespoon Minced garlic
One fourth cup Onion, minced
One half teaspoon Garam masala
One half teaspoon Chili powder
One fourth teaspoon Salt
One fourth teaspoon Pepper
1 tablespoon Soy sauce
2 cup Mashed potatoes
One half cup Fresh spinach, parboiled &
chopped
One fourth cup Cilantro, chopped
One fourth cup Green onions, cut or sliced up

Momo sauce, see recipe
Melt ghee in a small skillet. Add ginger, garlic & onion. Stir fry for 1
minute. Add garam masala, chili powder, salt, pepper & soy sauce. Stir fry
for 30 seconds. Remove from heat & add mashed potatoes. Add spinach when
cool, green onion & cilantro. Mix well. Put 1 tablespoon of filling into each
wrapper, seal the edges closed with a little water. Steam over steaming
rack & serve hot with sauce.
