Recipe - Potato Devils Food Cake

One fourth cup Shortening
2 One fourth Squares unsweetened
chocolate
1 Egg
6 tablespoon Evaporated milk
2 teaspoon Baking powder
1 teaspoon Vanilla
1 cup Sugar
One half cup Mashed potatoes
One fourth teaspoon Salt
1 One fourth cup Flour
One half cup Chopped nuts
Cream shortening. Add sugar, chocolate, which has
been melted over hot water, and mashed potatoes. Beat
thoroughly. Add egg yolk and milk. Sift flour,
measure, and sift with baking powder and salt. Beat
thoroughly. Add nuts and flavoring. Fold in stiffly
beaten egg white. Pour into welloiled layer cake
pans. Bake in moderate oven (375 F) 2530 minutes.
