Recipe - Potato Collops (Traditional Irish Dish)

3 Med. potatoes
1 lg Onion
Salt & pepper to taste
2 teaspoon Chopped parsley
One fourth pound Raw bacon, minced
2 tablespoon Butter
1 cup Scalded milk (still hot)
One fourth cup Grated cheddar cheese
Peel the potatoes and cut into very thin slices. Chop onion. Place a
layer of vegetables on a greased baking dish. Sprinkle with seasonings,
parsley and minced bacon. Dot with butter. Repepat layers until all ingreds.
