Recipe - Potato Collops

Ingredients:

3 md Potatoes
1 lg Onion
Salt and pepper to taste
2 teaspoon Parsley; chopped
One fourth pound Raw bacon; minced
2 tablespoon Butter
1 cup Scalded milk; still hot
One fourth cup Cheddar cheese; grated

1. Peel the potatoes and cut into very thin slices.

2. Chop onion. Place a layer of vegetables on a greased baking dish.

3. Sprinkle with seasonings, parsley, and minced bacon. Dot with butter.

4. Repeat layers until all ingredients are used. Pour milk over and top
with cheese.

5. Cover and bake in a preheated 350 degree F. oven for 45 minutes.

6. Uncover and continue cooking until potatoes are done and top is nicely
browned.
