Recipe - Potato Basque Soup

1 pound Italian sausage; cut or sliced up
One half cup Chopped onion
2 cn (16oz each) tomatoes
4 White potatoes; pared and
minced , (6 C)
One fourth cup Chopped parsley
1 cup Diagonally cut or sliced up celery
2 tablespoon Chopped celery leaves
1 One half cup Water
2 Beef bouillion cubes
1 Bay leaf
1 tablespoon Salt
One half teaspoon Dried leaf thyme
One fourth teaspoon Pepper
1 tablespoon Lemon juice
In large saucepan or kettle, brown sausage over medium heat. Add onion and
cook 5 minutes. Add remaining ingredients. Bring to a boil, reduce heat and
simmer uncovered 40 minutes or until potatoes are tender. Serves 6
