Recipe - Potato-Cheese Dream

4 cup Potatoes, Peeled, Thinly
Sliced
1 cup Cottage Cheese, 1% Lowfat
One fourth cup Egg Substitute
ds Pepper,Red,Ground
PamŽ Cooking Spray,1 Second
Spray
One half cup Cheddar Cheese, LowFat
One fourth cup Green Onions, Sliced
One fourth cup Parsley,Fresh,Chopped
Cook potatoes in boiling water to cover 8 to 10 minutes or just until
tender. Drain.
Place cottage cheese, egg substitute, and red pepper in container of an
electric blender or food processor; process 1 minutes or until smooth. Set
aside.
Place half of potatoes in an 8inch square baking dish coated with
cooking spray. Layer with half each of cheese, green onions, parsley, and
cottage cheese mixture. Repeat layers with remaining ingredients, reserving
parsley.
Bake, uncovered, at 375 degrees for 25 to 30 minutes or until lightly
browned. Sprinkle remaining parsley over top.
