Recipe - Portugese Green Bean Tureen

1 Mediuim onion; chopped
2 Cloves garlic; minced
4 cup Water
2 cup Diced white potatoed;
(peeled if desired)
One half teaspoon Salt
One half teaspoon Ground black pepper
2 cup Green beans; trimed and cut
into One half inch pieces,
(about One half pound)
2 tablespoon Chopped fresh cilantro
2 tablespoon Chopped fresh parsley
Hi, this is from Vegetarian Soup Cuisine by Jay Solomon. I just left out
the oil. I like his cookbooks a lot.
Dry sautee onions and garlic until they begin to sweat and are fragrant.
Add water, potatoes and salt and pepper, bring to a simmer, cook for 20
minutes. Stir in green beans and cook for 10 15 minutes more. Turn off
heat, stir in fresh herbs and let stand for 10 minutes.
Pour soup into a blender or food processor and process for 5 10 seconds
until smooth. Serve with warm, crusty bread.
