Recipe - Pork Chops With Peach Brandy Sauce

4 Pork loin chops
3 Firm peaches
One half Yellow onion
2 Shallots
1 Garlic clove
2 tablespoon Olive oil
3 tablespoon Apple juice
Salt and pepper
3 tablespoon Peach brandy
Season pork chops with salt and pepper. In bowl of food processor place
chopped peaches, yellow onion, shallots and garlic. Pour in 1 tablespoon
olive oil and apple juice. Season with salt and pepper and process until
well blended. In large skillet, heat remaining 1 tablespoon oil over medium
heat. Add peachonion mixture and cut or sliced up peaches. Saute 2 minutes. Stir
often. Remove all but about 2 tablespoons mixture from skillet. Turn heat
up and add chops. Cover and cook about 10 minutes. Turn chops halfway
through cooking time. Add peachonion mixture back into pan with chops and
add brandy. Simmer 2 minutes. Adjust seasoning if desired.
Approximately 1020 minutes.
