Recipe - Pork Balls With Peanut Sauce

750 g Minced pork; (pork and veal
mix)
100 g Prunes; roughly chopped
1 md Onion; finely chopped
1 teaspoon Sesame oil
1 teaspoon Tomato paste; (1 to 2)
2 teaspoon Minced ginger
2 teaspoon Ground coriander
1 Pinches salt
One fourth teaspoon Pepper
1 lg Egg
2 tablespoon Cooked rice; (or bread
crumbs)
(2 to 3)
Plain flour
Oil for frying
PEANUT SAUCE
2 tablespoon Grated carrot
1 tablespoon Canola or peanut oil
1 tablespoon Spanish onion; finely
chopped
1 teaspoon Garlic; minced or finely
; chopped
1 teaspoon Ginger; minced or finely
; chopped
300 ml Chicken or veal stock
1 tablespoon Saltreduced soya sauce
1 tablespoon Thai chilli sauce
2 tablespoon Crunchy peanut butter
2 Finely cut or sliced up kaffir lime
leaves; (optional)
Mix all ingredients except flour and oil for frying.
Set aside for at least half an hour.
Wet the palms with cold water and roll spoonfuls of mixture about 4 cms in
diameter.
Roll in flour, shake excess off and fry for 10 minutes in oil.
Peanut Sauce:
Gently sweat onion, garlic and giner in the oil for 4 or 5 minutes.
Add remaining ingredients and allow to simmer and reduce to a thick sauce.
If using as a meal, serve with rice, steamed Chinese vegetables and a
topping of freshly chopped coriander leaves.
