1 cn Pear halves; (425 grams )
Undrained
1 cn Peeled tomatoes; (425 grams
)
1 lg Onion; chopped
1 teaspoon Green peppercorns; rinsed OR
1/8 teaspoon Cayenne pepper
8 Lean pork steaks or
medallions
A little oil
1 Thick bread slices
Garlic cloves; cut in 1/2
1. Combine pear halves, peeled tomatoes, chopped onion, peppercorns or
cayenne pepper together in saucepan.
2. Cook over high heat for 10 minutes. Place in food processor, blend
coarsely, to create a relish. Heat a little oil in a heavy plain or ribbed
pan, until hot.
3. Cook pork, 2 to 3 minutes on each side, brushing with some relish.
4. Serve as illustrated on oilbrushed panfried thick bread slices, rubbed
with garlic.
