Recipe - Pork And Green Bean Stew

3 tablespoon Canola Oil
Allpurpose Flour seasoned
with Salt; Black, and
Cayenne Peppers
1 One half pound Lean Pork; cut into small
cubes
1 md Onion; minced
2 cup Chicken Broth
2 pound Fresh Green Beans; trimmed
and cut into 2inch pieces
6 Potatoes; peeled and cubed
1 teaspoon Gravy darkener; (Optional)
Preheat oven to 300F degrees.
Warm canola oil in a 4quart ovenproof stock pot or Dutch Oven over
mediumhigh heat setting.
While oil is warming, combine about a halfcup of flour with the seasonings
and dredge the cubed pork in the mixture. Brown the pork well in the warm
oil.
When the pork is browned to your satisfaction, add onion and sauté until
softened, about 3 to 5 minutes.
Add chicken broth. Cover pot; bake about 40 minutes, then add the green
beans and potatoes and bake for another hour or more, until everything is
nice and tender.
Darken the gravy if you wish, and if the dish is a bit dry. add more broth.
Season with salt and pepper to taste, and serve warm.
