Recipe - Polo Toscano (Thunder Bay Grille)

4 Chicken breasts; (4 ounce ea)
4 One half ounce Sliced Proscuitto Ham
4 One half ounce Sliced Mozzarella cheese
Sage to season breasts
1 ounce Olive oil to sautee breast
4 ounce Marsala wine
4 ounce Softened butter
1 teaspoon Chopped onion
One half Lemon juice
1 teaspoon Chef's salt to season
Flour enough to dust
chicken breast
; before sauteeing.
Slice breast open and season with sage. Fold Proscuitto ham around
mozzarella cheese and stuff into chicken breast. Saute breast in olive oil
over medium heat until breast reaches 165 degrees F. Remove breast to warm
place (oven). Add chopped onion, Marsala wine, seasoning salt, and lemon.
Reduce wine by One half and swirl in softened butter to form sauce. Serve sauce
over chicken breast.
