Recipe - Polenta Parmesan

2 One fourth ounce Polenta, uncooked instant
1 (quick cooking yellow corn
1 Meal)
Three fourths ounce Cheese, Parmesan, grated
1 teaspoon Margarine
1/8 teaspoon Garlic powder
One half cup Tomato sauce
1 One half ounce Cheese, mozzarella partskim
1 (shredded)
1. In 1 One half qt saucepan, brint 1 One half cups water to a full boil. Stir in
polenta, parmesan cheese, margarine, and garlic powder. Reduce heat
to medium and cook, stirring constantly, for 4 minutes. 2. Spray 8inch
flameproof pie pan with nonstick cooking spray; pour
polenta mixture into pie pan. Preheat broiler. 3. Pour tomato sauce
over polenta mixture; sprinkle with mozzarella
cheese. Broil until cheese is golden, about 2 minutes.
Each serving provides: One half Fat 1 One half Proteins One half Vegetable
1 One half Breads
Per serving: 689 mg sodium 21 mg cholesterol
