Recipe - Plum Tomato Salsa With Sherry Vinegar

6 Plum tomatoes, peeled,
Seeded, and cut into 1/2"
Dice
1 Medium shallot, cut or sliced up thin
1 Serrano chile, seeded and
Sliced thin
2 tablespoon Sherry vinegar
One half cup Olive oil
One half teaspoon Chopped fresh thyme, or
One fourth teaspoon dried
1 tablespoon Chopped fresh cilantro
1 tablespoon Chopped fresh parsley
Salt and ground black
Pepper to taste.
Mix all ingredients together in medium bowl. Serve within 2 hours.
