Recipe - Plum Tomato-Feta Pasta

3 cup Plum tomatoes; finely minced
One half cup Red onion; chopped
3 tablespoon Olive oil
1/3 cup Fresh parsley; chopped
One half teaspoon Salt
One half teaspoon Freshly ground pepper
8 ounce Feta cheese; crumbled
1 pound Radiatore or corkscrew
pasta; cook according to pk
Combine tomatoes, onion, oil, parsley, salt and pepper in large bowl. Add
feta and hot pasta; toss. Makes 6 servings.
Total prep time: 20 minutes Degree of difficulty: Easy
NOTES : The flavors of tomatoes and onion, parsley and oil mingle while the
pasta cooks.
