Recipe - Plum Delicious Chinese Chicken

2 pound Chicken breasts, split, with
skin
6 Ripe purple plums, pitted
and thinly cut or sliced up
1 Onion, halved and thinly
cut or sliced up
1 Clove garlic, minced
3 tablespoon Water
2 tablespoon Lemon juice
2 tablespoon Light soy sauce
One half teaspoon Liquid sugar substitute
1 teaspoon Hunan Blend
Brown chicken, skin side down, in an ungreased nonstick skillet or chicken
fryer. Drain and discard chicken fat. Blot chicken with paper towel,
remove skin, and return to the pan, skin side up. Add remaining ingredients
except the low calorie sweetener. Cover and simmer, stirring occasionally,
until chicken is tender 4045 minutes. Uncover and continue simmering
until sauce is thick. Add low calorie sweetener only after cooking is
complete and skillet has been removed from heat. Serves: 4
