Recipe - Plantation Green Beans

Ingredients:

80 Fresh long Pole or green
beans
8 sl Bacon; partially cooked
8 Toothpicks

SAUCE
4 tablespoon Bacon grease
3 tablespoon Cider vinegar
2 tablespoon Tarragon vinegar
1 teaspoon Salt
One half teaspoon Paprika
1 tablespoon Chopped parsley
1 tablespoon Grated onion

Partially cook beans in salted water until tender. Drain. Secure 10 beans
in a bundle wrapped with bacon and secured with a toothpick. Place on foil
covered cookie sheet and bake at 400ø until bacon is done on all sides (10
to 15 minutes). Pour sauce over beans and serve hot. To make sauce, boil
ingredients over medium heat for 5 minutes. Pour 1 to 1One half Tablespoons
over each bundle. Yield: 8 servings.
