Recipe - Pistachio Nut Tea Bread

1 Stick butter
1 cup Sugar
2 Eggs
3 cup Orange juice
Grated peel (no white
attached) of 2 oranges
12 cup Selfrising flour
2 cup Fresh or reconstituted
powdered buttermilk
1 cup Whole pistachios
Preheat the oven to 350 degrees F. Grease and flour a 9 x 5 x 3inch loaf
pan. In a large mixing bowl, beat the butter and sugar until well blended.
Beat in the eggs, orange juice, and peel until light. Add the flour,
alternating with the buttermilk. Fold in the pistachios. Pour into the
prepared pan and bake until a skewer inserted into the center comes out
clean, about 1 hour.
Makes 1 loaf
