2 One half ga WATER; COLD
1 One half ga WATER; HOT
12 pound ICE
3 LEMON FRESH
3 ga JUICE; PINEAPPLE #3
3 One half pound SUGAR; GRANULATED 10 LB
1. DISSOLVE SUGAR IN WATER. COOL.
2. ADD LEMON AND PINEAPPLE JUICES AND WATER TO SUGAR SOLUTION.
MIX THOROUGHLY. COVER AND REFRIGERATE.
3. ADD ICE JUST BEFORE SERVING.

** ALL NOTES ARE PER 100 PORTIONS.
NOTE: 1. IN STEP 2, 12 OZ LEMONS A.P. (3 LEMONS) WILL YIELD 1/2
CUP JUICE.
NOTE: 2. IN STEP 2, 2 TBSP FROZEN CONCENTRATED LEMON JUICE AND
6 TBSP COLD WATER MAY BE USED.
