Recipe - Pineapple Upside Down

One half cup Shortening
1 cup Sugar
2 Eggs
1 Three fourths cup Sifted flour
1 tablespoon Baking powder
Three fourths teaspoon Salt
2/3 cup Milk
One half teaspoon Vanilla extract
One half Stick butter
1 cup Brown sugar
5 sl Pineapple
5 Marachino cherries

*** Cream shortening and sugar. Add eggs, one at a time and beat well. Add
sifted dry ingredients alternately with milk and vanilla; mix well. Melt
butter in 9inch square pan. Sprinkle with brown sugar; stir until melted.
Arrange pineapple slices in pan; place cherry in center of each slice. Pour
batter over topping. Bake in 3500F oven for 5060 minutes until done.
