Recipe - Pineapple Curry Sauce

One fourth teaspoon Each cardamom, turmeric,
Ground coriander and cumin
1/8 teaspoon Each ground cloves & nutmeg
1 tablespoon Brown sugar
One half teaspoon Paprika
2 Cloves garlic, minced
1 One half teaspoon Fresh ginger, grated
One fourth cup Pineapple juice
One half cup Pineapple, finely minced
Stir spices together in a small skillet over low heat for a minute or two.
Add garlic, ginger, sugar, and pineapple juice and cook over medium heat,
stirring frequently, for 5 to 7 minutes. Remove from heat and add minced
pineapple. Stir. Makes eight 2Tablespoon servings
