Recipe - Pine Nut Pancakes (Low-Fat)

Ingredients:

1 One half cup Reducedfat biscuit/baking
mix
1 cup Puffed rice cersal
1/3 cup Finely chopped banana
One half cup Shredded peeled apple
1 3/8 cup Raisins
2 tablespoon Pine nuts; toasted
1 lg Egg
Three fourths cup Skim milk
One half teaspoon Vanilla

In a bowl, combine bakinf mix, cereal, banana, aoole, raisins and pine
nuts. In another bowl, beat egg, milk and vanilla; stir into dry
ingredients just unti moistened. Pour batter by One fourth cupfuls onto a lightly
greased hot griddle; turn when bubbles form on top of pancakes. Cook until
second side is golden brown. Serve immediately. Yield
: 10 pancakes. Serving size 2 pancakes.
