Recipe - Pina Colada Fool

1 cup Drained unsweetened crushed
pineapple
1 One half cup Whipping cream
One half cup Sweetened shredded coconut
1 tablespoon Coconut liqueur or rum (opt)
Mint sprigs (opt)
In blender or food processor, puree half of the pineapple; add to remaining
pineapple. In separate bowl, whip cream; fold in pineapple, coconut and
coconut liqueur (if using).
Divide among 6 long stemmed glasses. Chill for 1 hour. Garnish with mint
