2 ounce Ginger
1 Three fourths ounce Yellow mustard seed
1 One half ounce Cloves
2 One fourth ounce Black pepper
1 One half ounce Birdseye or Nyasa chilies
Three fourths ounce Mace
Three fourths ounce Coriander seeds
3 One half ounce Allspice
Leave spices whole. Use for chutneys, pickled fruits and vegetables, and to
spice vinegar. Tie in a small muslin bag and remove after pickling, or add
straight to vinegar, depending on the type of pickle.
