Recipe - Pickled Herring -1

7 pound Fresh Herring Fillets; * see
note
2 One half qt White Vinegar
6 Cinnamon Sticks
One fourth cup Allspice; (whole)
One fourth cup Mace; (leaves)
One fourth cup Black Peppercorns
One fourth cup Whole Cloves
3 lg Onions; cut or sliced up thinly
1 Three fourths cup Sugar
* skins left on and cut into 1 inch pieces.
Combine all ingredients except herring and boil for 15 minutes. Add
herring, let simmer for 15 minutes. Let cool in liquid; refrigerate.
