Recipe - Persimmon Bar Cookies

3 Eggs
1 cup Sugar
1 One half cup Persimmon pulp
One half cup Nuts; chopped
1 teaspoon Vanilla
One half teaspoon Salt
2 cup Flour
2 teaspoon Baking powder
1 teaspoon Baking soda
One half teaspoon Cinnamon
FROSTING
2 tablespoon Cream
One half pound Powdered sugar
One fourth cup Margarine
Combine salt, flour, baking powder and soda, and cinnamon. Set aside. Beat
eggs, add sugar gradually. Add remaining ingredients and blend. Spread in a
greased jelly roll pan 10 One half x 15 One half inch or 2 greased 9 x 9 inch pans.
Bake 30 to 40 minutes at 325 degrees. Frost and sprinkle with nuts if
desired. Cut into bars.
