Recipe - Peppery Dry Rub

2 cup Coarsely cracked black
peppercorns
One fourth cup Coarsely cracked white
peppercorns
2 tablespoon Ground coriander
2 tablespoon Red pepper flakes; (up to 4)
One fourth cup Light brown sugar; packed
One half cup Salt
Stir together all ingredients in a bowl. Rub into all sides and ends of
meat.
Naturally, I had to make a lot for all the meat I had.
